  • ⅔ cup granulated sugar
  • 2 large eggs
  • 1½ teaspoons vanilla extract

  • 2 medium apples, peeled and chopped (use a mix of tart and sweet)
  • 2 tablespoons granulated sugar (for apples)
  • ⅓ cup light brown sugar (for cinnamon sugar)
  • 2 teaspoons ground cinnamon
  • ½ cup powdered sugar (for icing)
  • 13 tablespoons milk (for icing)

Instructions

  1. Preheat your oven to 350°F. Grease and flour one 9×5-inch loaf pan.
  2. In a small bowl, mix the light brown sugar and cinnamon for the cinnamon sugar layer. Set this aside.
  3. Toss the chopped apples with the 2 tablespoons of granulated sugar. Set the apples aside.
  4. Make the batter: In a large bowl, cream the softened butter and granulated sugar until the mixture is light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. In a separate bowl, whisk together the flour, baking powder, and salt.
  6. Add the dry ingredients to the wet ingredients alternately with the milk, mixing only until the batter is just combined. Do not overmix.
  7. Assemble the loaf: Spread half of the batter evenly into the prepared loaf pan. Top this layer with half of the sugared apples and half of the cinnamon sugar mixture.
  8. Repeat the layering process with the remaining batter, apples, and cinnamon sugar.
  9. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the bread cool in the pan for 10 minutes before carefully removing it to a wire rack to cool further.
  11. Make the icing: Whisk the powdered sugar with 1 tablespoon of milk until you reach a smooth, pourable consistency. Add more milk, a half teaspoon at a time, if needed.
  12. Drizzle the vanilla glaze over the cooled loaf. Slice and serve your homemade apple fritter bread.
