Make unbelievably creamy banana oatmeal on the stovetop in under 15 minutes. This recipe uses ripe bananas for natural sweetness, creating a wholesome and easy breakfast staple.

  • 1 cup rolled oats
  • 2 cups water or milk (dairy or non-dairy)
  • 2 very ripe medium bananas, mashed
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Combine the rolled oats, water or milk, mashed bananas, cinnamon, and salt in a medium saucepan.
  2. Place the saucepan over medium heat. Bring the mixture to a gentle simmer, stirring occasionally.
  3. Reduce the heat to low and continue to cook for 5 to 7 minutes, stirring frequently. The goal is to achieve a thick, creamy consistency. The mashed banana will dissolve slightly, naturally sweetening and thickening the oats.
  4. Remove the saucepan from the heat. Stir in the vanilla extract, if using.
  5. Divide the creamy banana oatmeal into bowls. Serve immediately with your preferred toppings.

Notes

  • For extra creaminess, use whole milk or full-fat canned coconut milk as your liquid.
  • To achieve a Bananas Foster flavor, stir in 1 tablespoon of brown sugar and a splash of rum extract (optional) during the last minute of cooking.
  • Top with sliced almonds, chopped walnuts, or a drizzle of peanut butter for added texture and protein.
