1 1/2 cups warm water (about 110°F)
2 1/4 teaspoons active dry yeast
2 tablespoons granulated sugar
4 cups all-purpose flour, plus more for dusting
1 teaspoon salt
1/4 cup unsalted butter, melted (for brushing dough)
1/2 cup unsalted butter, softened (for topping)
2 teaspoons garlic powder
1 teaspoon dried Italian seasoning
1/2 teaspoon salt (for topping)
1/2 cup grated Parmesan cheese
Instructions
Combine the warm water, yeast, and sugar in a large bowl. Let this mixture sit for 5 to 10 minutes until it becomes foamy. This shows the yeast is active.
Add 3 1/2 cups of the flour and 1 teaspoon of salt to the yeast mixture. Mix with a wooden spoon until a shaggy dough forms.
Turn the dough out onto a lightly floured surface. Knead the dough for 5 to 7 minutes, adding the remaining flour gradually until the dough is smooth and no longer sticky.
Lightly grease a large bowl with oil. Place the dough in the bowl, turning it once to coat. Cover the bowl with plastic wrap or a clean kitchen towel. Let the dough rise in a warm place for 1 to 1.5 hours, or until it has doubled in size.
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
Punch down the risen dough gently. Divide the dough into 12 equal pieces. Roll each piece into a long, even strip, about 10 to 12 inches long and 1 inch thick. Place the breadsticks on the prepared baking sheet, leaving a small space between them.
Bake the breadsticks for 10 to 12 minutes, or until they are lightly golden brown.
While the breadsticks bake, prepare the topping. In a small bowl, combine the 1/2 cup softened butter, garlic powder, Italian seasoning, and 1/2 teaspoon salt. Mix until smooth.
As soon as the breadsticks come out of the oven, brush them generously with the garlic butter mixture.
Immediately sprinkle the tops evenly with the grated Parmesan cheese.
Serve the homemade breadsticks warm as a dinner side dish or appetizer.
Notes
For an extra soft texture, you can brush the dough with melted butter before the first rise, similar to making soft dinner rolls.
If you prefer cheesy breadsticks, sprinkle mozzarella cheese over the tops during the last 2 minutes of baking before applying the garlic butter.
You can make the dough ahead of time and refrigerate it for up to 24 hours for a slower, more flavorful rise.
