Make this easy, creamy chicken cauliflower rice casserole for a satisfying, low-carb weeknight dinner. It uses shredded chicken and riced cauliflower for a comforting, gluten-free bake.

  • 3 cups cooked chicken breast, shredded
  • 4 cups frozen or fresh cauliflower rice
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup broccoli florets, small
  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese, divided
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
  2. In a large skillet over medium heat, sauté the diced onion until soft, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Add the cauliflower rice and broccoli florets to the skillet. Cook, stirring occasionally, until the cauliflower rice has softened slightly, about 5 to 7 minutes.
  4. Stir in the shredded chicken, chicken broth, and heavy cream. Cook until the mixture is heated through.
  5. Remove the skillet from the heat. Stir in the softened cream cheese, salt, and pepper until the cheese is fully melted and the sauce is smooth and creamy.
  6. Fold in half (1/2 cup) of the shredded cheddar cheese.
  7. Transfer the entire mixture to your prepared baking dish.
  8. Top the casserole evenly with the remaining 1/2 cup of cheddar cheese.
  9. Bake for 20 to 25 minutes, or until the casserole is bubbly and the cheese on top is melted and lightly golden brown.
  10. Let the casserole rest for 5 minutes before you serve it.

  • For a lighter version, substitute the cream cheese with plain Greek yogurt, though the texture will be less rich.
  • You can use rotisserie chicken to save time on weeknights.
