Make these soft and chewy Christmas Gooey Butter Cookies for your holiday trays. This easy recipe uses cream cheese for a melt-in-your-mouth texture and is coated in powdered sugar for a festive look.

  • 1 box (15.25 ounces) yellow cake mix
  • 1 cup unsalted butter, melted
  • 8 ounces cream cheese, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar, plus more for dusting
  • 1/2 cup red and green sprinkles

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper.
  2. In a large bowl, combine the yellow cake mix and the melted butter. Mix until the mixture resembles coarse crumbs. Press this mixture evenly into the bottom of an ungreased 9×13 inch baking pan. Set aside.
  3. In a separate bowl, beat the softened cream cheese until smooth. Add the egg and vanilla extract, mixing until just combined.
  4. Gradually add the 1 cup of powdered sugar to the cream cheese mixture, beating until the filling is smooth and creamy. Do not overmix.
  5. Spread the cream cheese mixture evenly over the cake mix base in the pan.
  6. Sprinkle the red and green sprinkles evenly over the cream cheese layer.
  7. Bake for 25 to 30 minutes, or until the edges are lightly golden and the center is set. The center should still look slightly soft.
  8. Remove the pan from the oven and let it cool completely on a wire rack.
  9. Once cool, cut the dessert into squares. Dust generously with extra powdered sugar before serving.

Notes

  • For a richer flavor, chill the dough base for 30 minutes before pressing it into the pan.
  • If you prefer individual cookies instead of bars, drop rounded tablespoons of the base mixture onto a prepared baking sheet, top with the cream cheese mixture, and bake for 12-15 minutes.
  • Store leftover cookies in an airtight container at room temperature for up to four days.
