  • 2 lbs Yukon Gold potatoes, scrubbed and diced into 1/2-inch cubes
  • 2 tablespoons avocado oil or olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. Place the diced potatoes in a large bowl. If you want extra crispiness, soak the potatoes in cold water for 30 minutes, then drain them completely and dry them thoroughly with a clean kitchen towel. This step removes surface starch.
  3. In the bowl with the dried potatoes, add the avocado oil, smoked paprika, garlic powder, onion powder, rosemary, salt, and pepper. Toss everything together until the potatoes are evenly coated.
  4. Spread the seasoned potatoes in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary to ensure they roast instead of steam.
  5. Roast for 20 minutes. Remove the pan from the oven and flip the potatoes using a spatula.
  6. Return the pan to the oven and roast for another 15 to 20 minutes, or until the potatoes are deeply golden brown and crispy on the edges.
  7. Remove from the oven, sprinkle with fresh parsley, and serve immediately as a perfect side dish for eggs or bacon.
