  • 2 lbs ground beef (80/20 recommended)
  • 1 large yellow onion, finely chopped
  • 1/2 cup breadcrumbs (plain or panko)
  • 1 large egg, lightly beaten
  • 1/4 cup milk
  • 1 packet (1.25 oz) dry onion soup mix
  • 1 (10.5 oz) can condensed French onion soup, undiluted
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 4 slices Swiss cheese

Instructions

  1. In a large bowl, gently combine the ground beef, chopped onion, breadcrumbs, egg, milk, dry onion soup mix, Worcestershire sauce, pepper, and salt. Mix until just combined; do not overmix.
  2. Shape the mixture into a loaf shape and place it in the basin of a 5 or 6-quart slow cooker.
  3. Pour the undiluted French onion soup over the top of the meatloaf, spreading it evenly to cover.
  4. Cover the slow cooker and cook on LOW for 5 to 6 hours or on HIGH for 2.5 to 3 hours, until the internal temperature reaches 160°F.
  5. About 15 minutes before the cooking time ends, remove the lid and place the Swiss cheese slices evenly over the top of the meatloaf. Replace the lid until the cheese is melted and gooey.
  6. Carefully remove the meatloaf from the slow cooker. Let it rest for 10 minutes before slicing and serving with the pan juices spooned over top.

  • For an extra savory flavor, substitute half the ground beef with ground chuck.
  • If you prefer a thicker sauce, remove the meatloaf halfway through cooking, stir 1 tablespoon of cornstarch into the liquid, and let it cook for the remaining time.
