Make this hearty beef noodle soup on the stovetop for a comforting, rich meal. It uses simple ingredients to create a savory broth and tender beef, perfect for a busy weeknight dinner.

  • 2 tablespoons olive oil
  • 2 pounds beef chuck, cut into 1-inch cubes
  • 1 large onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 8 cups low-sodium beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/4 cup all-purpose flour
  • 1 pound egg noodles
  • Salt and black pepper to taste

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Brown the beef cubes in batches, then remove them and set aside.
  2. Add the chopped onion, carrots, and celery to the pot. Cook until the vegetables soften, about 5 to 7 minutes.
  3. Add the minced garlic and cook for one minute until fragrant.
  4. Return the beef to the pot. Sprinkle the flour over the beef and vegetables and stir to coat everything. Cook for one minute.
  5. Pour in the beef broth and Worcestershire sauce. Add the dried thyme and dried rosemary. Bring the mixture to a simmer.
  6. Reduce the heat to low, cover the pot, and let the soup simmer for 1 hour and 15 minutes, or until the beef is tender.
  7. Increase the heat to medium and bring the soup back to a gentle boil. Add the egg noodles and cook according to package directions until they are tender.
  8. Taste the soup and add salt and pepper as needed. Serve hot for a satisfying bowl of comfort food.

  • For an even richer broth, sear the beef in batches without crowding the pot.
  • If you prefer a thicker gravy, mix the flour with a small amount of cold water before adding it to the pot.
