Ingredients
Scale
1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
1 lb fresh green beans, trimmed
2 tablespoons olive oil
4 cloves garlic, minced
1/4 cup low-sodium soy sauce
1/4 cup honey
2 tablespoons rice vinegar
1 teaspoon ground ginger
1/2 teaspoon red pepper flakes (optional)
Salt and black pepper to taste
Instructions
Season the chicken pieces lightly with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set it aside.
Add the trimmed green beans to the same skillet. Cook, stirring occasionally, for 4-6 minutes until they are crisp-tender.
While the beans cook, whisk together the soy sauce, honey, rice vinegar, ground ginger, and red pepper flakes in a small bowl to create the sauce.
Return the cooked chicken to the skillet with the green beans.
Add the minced garlic to the skillet and cook for 1 minute until fragrant.
Pour the honey garlic sauce over the chicken and green beans. Toss everything together to coat well. Cook for 1-2 minutes until the sauce thickens slightly.
Remove from heat and serve this easy chicken green bean dinner immediately.
Notes
For extra flavor, use chicken thighs instead of breasts; they stay juicier.
If you prefer a thicker sauce, mix 1 teaspoon of cornstarch with 1 tablespoon of cold water and stir it into the sauce during the last minute of cooking.
This recipe is great for meal prep; it reheats well.
