  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 lb fresh green beans, trimmed
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 1 teaspoon ground ginger
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste

Instructions

  1. Season the chicken pieces lightly with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set it aside.
  3. Add the trimmed green beans to the same skillet. Cook, stirring occasionally, for 4-6 minutes until they are crisp-tender.
  4. While the beans cook, whisk together the soy sauce, honey, rice vinegar, ground ginger, and red pepper flakes in a small bowl to create the sauce.
  5. Return the cooked chicken to the skillet with the green beans.
  6. Add the minced garlic to the skillet and cook for 1 minute until fragrant.
  7. Pour the honey garlic sauce over the chicken and green beans. Toss everything together to coat well. Cook for 1-2 minutes until the sauce thickens slightly.
