Make these easy muffin tin egg bites for quick, protein-packed breakfasts. They are perfect for meal prep and a satisfying start to your day.

  • 12 large eggs
  • 1/4 cup milk or heavy cream
  • 1/2 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup cooked, crumbled meat (like sausage or bacon) or chopped vegetables (spinach, peppers)
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 12-cup standard muffin tin.
  2. In a large bowl, whisk the eggs and milk or cream together until fully combined. Season with salt and pepper.
  3. Distribute the cooked meat or vegetables evenly among the muffin cups, filling each about one-third full.
  4. Sprinkle the shredded cheese over the meat or vegetables in each cup.
  5. Carefully pour the egg mixture over the fillings in each cup, filling them about three-quarters full. Do not overfill.
  6. Bake for 15 to 20 minutes, or until the eggs are set and a toothpick inserted into the center comes out clean.
  7. Let the egg bites cool in the tin for a few minutes before carefully removing them with a small offset spatula or knife.
  8. Serve warm immediately, or cool completely before storing for meal prep.

  • For best results when meal prepping, store cooled egg bites in an airtight container in the refrigerator for up to four days.
