Make this rich, savory French Onion Chicken Bake. It combines tender chicken with deeply caramelized onions and melted Gruyère cheese for a comforting dinner simple enough for weeknights.

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 large yellow onions, thinly sliced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon butter
  • 1/2 cup dry white wine or beef broth
  • 1 can (10.5 ounces) condensed cream of mushroom soup
  • 1/2 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon dried thyme
  • 1 cup shredded Gruyère cheese
  • 1/2 cup French fried onions (optional, for topping)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. In a large skillet over medium heat, melt the butter with the olive oil. Add the sliced onions and cook slowly for 20 to 25 minutes, stirring occasionally, until they are deeply caramelized and soft. Season with salt and pepper.
  3. Pour the white wine or beef broth into the skillet with the onions and scrape up any browned bits from the bottom. Cook for 2 minutes until the liquid reduces slightly. Remove the onions from the skillet and set them aside.
  4. In a bowl, whisk together the cream of mushroom soup, beef broth, Worcestershire sauce, and dried thyme.
  5. Place the chicken breasts in the prepared baking dish. Pour the soup mixture evenly over the chicken.
  6. Spoon the caramelized onions over the top of the chicken and sauce mixture.
  7. Bake for 25 minutes.
  8. Remove the dish from the oven, sprinkle the Gruyère cheese over the top, and return to the oven. Bake for another 5 to 10 minutes, or until the cheese is melted and bubbly and the chicken reaches an internal temperature of 165°F (74°C).
  9. If using, sprinkle the French fried onions over the cheese during the last 2 minutes of baking for extra crunch.
  10. Let the dish rest for 5 minutes before serving. Serve this cheesy chicken dinner over rice or with crusty bread.

Notes

  • For a low carb french onion chicken option, skip serving with rice or bread.
  • If you prefer a skillet french onion chicken, sear the chicken first, remove it, build the sauce, and then return the chicken to the skillet to simmer until cooked through before topping with cheese and broiling briefly.
  • Gruyère cheese provides the most authentic flavor, but provolone or Swiss cheese work as substitutes for your chicken with melted cheese topping.
