A straightforward recipe for baked lasagna using cottage cheese for a high protein, comforting family dinner.

  • 1 (16 ounce) package lasagna noodles
  • 1 (15 ounce) container cottage cheese
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
  • 1 large egg
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cups meat sauce (homemade or store-bought)
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C). Lightly grease a 9×13 inch baking dish.
  2. Cook the lasagna noodles according to package directions until al dente. Drain the noodles and set them aside.
  3. In a medium bowl, combine the cottage cheese, squeezed dry spinach, egg, basil, salt, and pepper. Mix well.
  4. Spread about 1 cup of the meat sauce evenly over the bottom of the prepared baking dish.
  5. Arrange four lasagna noodles over the sauce, slightly overlapping if necessary.
  6. Spread half of the cottage cheese mixture evenly over the noodles.
  7. Sprinkle one-third of the mozzarella cheese over the cottage cheese layer.
  8. Spoon another 1 cup of meat sauce over the mozzarella.
  9. Repeat the layers: four noodles, the remaining cottage cheese mixture, one-third of the mozzarella, and 1 cup of meat sauce.
  10. Top with the final four noodles, the remaining meat sauce, the remaining mozzarella cheese, and the Parmesan cheese.
  11. Bake for 30 minutes.
  12. Cover the dish loosely with aluminum foil and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
  13. Let the lasagna rest for 10 minutes before slicing and serving.

Notes

  • For a higher protein lasagna, use low-fat cottage cheese.
  • If you prefer a lasagna no ricotta, this recipe works perfectly.
  • To make this a crockpot lasagna, layer ingredients as directed and cook on low for 4-5 hours.
