- 1 (16 ounce) package lasagna noodles
- 1 (15 ounce) container cottage cheese
- 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
- 1 large egg
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 cups meat sauce (homemade or store-bought)
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Preheat your oven to 375 degrees F (190 degrees C). Lightly grease a 9×13 inch baking dish.
- Cook the lasagna noodles according to package directions until al dente. Drain the noodles and set them aside.
- In a medium bowl, combine the cottage cheese, squeezed dry spinach, egg, basil, salt, and pepper. Mix well.
- Spread about 1 cup of the meat sauce evenly over the bottom of the prepared baking dish.
- Arrange four lasagna noodles over the sauce, slightly overlapping if necessary.
- Spread half of the cottage cheese mixture evenly over the noodles.
- Sprinkle one-third of the mozzarella cheese over the cottage cheese layer.
- Spoon another 1 cup of meat sauce over the mozzarella.
- Repeat the layers: four noodles, the remaining cottage cheese mixture, one-third of the mozzarella, and 1 cup of meat sauce.
- Top with the final four noodles, the remaining meat sauce, the remaining mozzarella cheese, and the Parmesan cheese.
- Bake for 30 minutes.
- Cover the dish loosely with aluminum foil and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
- Let the lasagna rest for 10 minutes before slicing and serving.
Notes
- For a higher protein lasagna, use low-fat cottage cheese.
- If you prefer a lasagna no ricotta, this recipe works perfectly.
- To make this a crockpot lasagna, layer ingredients as directed and cook on low for 4-5 hours.
