  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 12 ounces linguine or fettuccine pasta
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese, plus more for serving
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken pieces lightly with salt and pepper.
  2. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the chicken and cook until browned on all sides, about 5-7 minutes. Remove the chicken and set it aside.
  3. Add the minced garlic to the pot and cook for 1 minute until fragrant. Do not let it burn.
  4. Pour in the chicken broth and bring the liquid to a boil. Add the pasta, Italian seasoning, salt, and pepper. Stir well.
  5. Reduce the heat to medium-low, cover the pot, and simmer according to the pasta package directions, stirring occasionally to prevent sticking, until the pasta is nearly tender (about 8-10 minutes).
  6. Stir in the heavy cream and return the mixture to a gentle simmer.
  7. Return the cooked chicken to the pot. Stir in the grated Parmesan cheese until the sauce is smooth and creamy. Cook for 1-2 minutes until the chicken is heated through.
  8. Remove from heat. Taste and adjust salt and pepper if needed.
  9. Serve immediately, garnished with fresh parsley and extra Parmesan cheese.
