2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup milk
1/4 cup vegetable oil
1 large egg
1 cup shredded mozzarella cheese
1/2 cup pizza sauce
1/2 cup mini pepperoni slices
1/4 cup grated Parmesan cheese
Instructions
Preheat your oven to 375 degrees Fahrenheit. Line a 12-cup muffin tin with paper liners or grease well.
In a large bowl, whisk together the flour, baking powder, salt, and pepper.
In a separate bowl, whisk together the milk, vegetable oil, and egg until combined.
Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix the batter.
Gently fold in the mozzarella cheese and mini pepperoni slices into the batter.
Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
Top each muffin with a small spoonful of pizza sauce.
Sprinkle the grated Parmesan cheese over the sauce on top of each muffin.
Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
Let the pizza muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
For freezer lunches, cool the mini pizza muffins completely before placing them in a freezer-safe bag or container. Reheat in the microwave or toaster oven.
You can substitute the pepperoni with cooked, crumbled sausage or chopped vegetables like bell peppers for variety.
