This hearty, one-dish bake combines a savory ground beef sloppy joe filling with a sweet, fluffy Jiffy cornbread topping. It is a simple, budget-friendly comfort food bake perfect for busy weeknights.

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 (15 ounce) can tomato sauce
  • 1/2 cup water
  • 1/4 cup packed brown sugar
  • 2 tablespoons yellow mustard
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (8.5 ounce) package Jiffy Corn Muffin Mix
  • 1 large egg
  • 1/3 cup milk
  • 1 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Cook the ground beef and onion in a large skillet over medium heat until the beef is browned and the onion is soft. Drain off any excess grease.
  3. Stir in the tomato sauce, water, brown sugar, mustard, Worcestershire sauce, chili powder, salt, and pepper into the skillet with the meat mixture. Bring to a simmer and cook for 5 minutes, stirring occasionally. Spread this sloppy joe filling evenly into the bottom of your prepared baking dish.
  4. In a medium bowl, prepare the cornbread batter according to the package directions, usually mixing the Jiffy mix, egg, and milk. Do not overmix the batter.
  5. If using cheese, sprinkle half of the shredded cheddar over the meat layer.
  6. Pour or spoon the cornbread batter evenly over the meat filling.
  7. Bake for 20 to 25 minutes, or until the cornbread is golden brown and a toothpick inserted into the center comes out clean.
  8. If you are adding extra cheese, sprinkle the remaining cheddar over the top during the last 5 minutes of baking.
  9. Let the casserole cool for 5 minutes before you cut and serve this easy ground beef casserole.

  • For a cheesier bake, mix 1 cup of shredded cheddar directly into the cornbread batter before pouring it over the meat.
