Make soft, chewy strawberry cake mix cookies with a crackly powdered sugar top. This recipe uses only four simple ingredients for a fast, fruity dessert.

  • 1 box (15.25 oz) strawberry cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup powdered sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, combine the strawberry cake mix, eggs, and vegetable oil. Mix with a spoon or electric mixer until a thick dough forms. Do not overmix.
  3. Pour the powdered sugar into a shallow dish.
  4. Scoop the dough into balls, about 1 tablespoon each. Roll each dough ball completely in the powdered sugar until fully coated.
  5. Place the coated dough balls onto the prepared baking sheets, leaving about 2 inches between them.
  6. Bake for 9 to 11 minutes. The cookies will look slightly underbaked in the center when you remove them.
  7. Let the cookies cool on the baking sheet for 5 minutes before moving them to a wire rack to cool completely. The tops will develop a crinkle as they cool.

Notes

  • For a variation, gently fold 1/2 cup of mini chocolate chips into the dough before rolling.
  • To make a simple glaze, whisk 1 cup of powdered sugar with 2 tablespoons of fresh lemon juice until smooth. Drizzle over cooled cookies.
